Kale Spinach & Chickpea Soup
Here’ s a Little recipe that’s absolutely so delicious (and abracadabra easy) that Im sure it will take its place as one of your favourite winter soups. So what are you getting for your 15 minutes of work in preparing this yummy dish. Well apart from the obvious delicious supper. Kale if you haven’t heard is something of a super green full of heart healthy potassium, vitamin C, B6 as well as minerals like copper, potassium, iron, manganese and phosphorus. Spinach this leafy green has similar benefits to kale plus, it’s a good source of selenium and niacin. Chickpeas are high in fibre and protein so this dish should keep you feeling fuller for longer and finally sweet potato is packed full of powerful natural antioxidants. So If you’re looking for a delicious health boosting soup this is the one.
3 cups of Spinach
1½ cups of Kale (very finely chopped)
1 Large Sweet potato peeled & diced
1 Medium Onion
¼ cup of Fresh Flat Leaf Parsley
1 Tin of Chickpeas
2 Pints of Filtered Water
4tsp of Argan Oil or any Nutty Flavoured Oil
Salt & Pepper to Taste
Add the roughly chopped onions to the cold oil in a large pan, slowly cook for 5-7 minutes or until lovely golden and translucent making sure that they don’t burn.
Add the diced sweet potato and cook for a further few minutes. Add the two pints of filtered water. If your kale is purchased from a super market it may be already taken off the stem if not remove the stem from the middle of the leaf and just retain the leafy edges. Chop very finely and add the kale to the pan along with the chickpeas.Cook on a rolling boil for 15-20 minutes. Then Finally chop the Spinach and parsley and add to the soup, cook for a further 5 minutes or until done. (adding these at the end of cooking will ensure a lovely vibrant colour to your soup) Blend your soup to the desired consistency. I like to leave a few whole pieces for texture and presentation.
Season with salt and pepper.
